I'm out here in Salt Lake City on a two night stand Saucing it up with G. Love. The West / West Coast run here has been pretty mellow, though we've done some serious miles, including flying down to Phoenix for the Pot of Gold festival. Apparently, I'm not the only one who maybe threw down a little too hard down there. But I'm grateful for the chill vibe of two nights up here and psyched to have a real bed before we roll up to WA.
Anyhow, I'm also trying to work on my chili business, I had a real great inaugural sale on the break between tours. I learned a lot. Everybody digs my all meat health chili - I'd love some right now in fact! But the main thing I learned is that my pricing is way off! I'm trying to think of how I can keep my original plan, just great meat chili you know? Smaller packaging? Additional water? Or a seriously premium price.
It will probably be some combination of changes. I'm going to have to do a much bigger batch, four time as much or more. That's a hell of a lot of meat!
At any rate, I will have a lot of figuring and estimating to do in the next couple days.
But first we'll rock The State Room one more night. I'm digging this town now, though it's just because I can bike around, and all day breakfast at the Little American. And today I'm looking forward to the tacos next to the venue, everybody was raving about them yesterday.
